While still at home, I decided to learn a recipe that my mother and I would make when I was a kid; banana muffins. I was very excited to make these muffins because they were such a big part of my childhood and I remember loving them. The recipe is from a cookbook that was made for my brother’s preschool class, where each student provided a recipe their family liked. I think this is a really fun idea and fits well here as it has to do with education. The recipe goes as follows:

I had to cut out the school photo of my brother for privacy.

We decided to put chocolate chips in half the batter. We cooked them for the 20 minutes and they came out perfectly. They were just as good as I remember, especially eating them while they are still warm from the oven.

Overall I would rate this recipe 9/10. It is very simple with not too many ingredients and easy instructions. If you have bananas that are going bad this is perfect. It is not a meal, but it would be a very good snack and I could see myself bringing one of these to my college classes. They are very tasty, and would be great for a snack or a light breakfast. If available, I would recommend warming them up in the microwave before eating, but they are good at room temperature as well. I feel confident that I will make these again in the near future!
