This week I decided to team up with my classmate Trinity Armoogam to make cottage cheese muffins. This is a very special recipe to me because I got the idea to make them from my Grandmother who would often make them for me when I would visit her. I was very excited to make them myself, but also scared that they would not turn out as good as I remember them being. Nonetheless, I got the recipe from my mother and gathered the ingredients needed. The recipe goes as follows:

Yield: 8-10 muffins

Ingredients:

  • 12 oz cottage cheese
  • 3 tbsp sugar
  • 1/2 cup melted butter
  • 3 eggs
  • dash of salt
  • 1 cup of flour
  • 2 tsp baking powder

Directions:

  1. Preheat oven to 400 degrees
  2. In the order listed above, mix ingredients in a large bowl
  3. Scoop batter into a greased muffin tin (about 3/4 full)
  4. Bake for 20 minutes

I was extremely happy with how the muffins turned out! The ingredients are simple and I already had almost all the ingredients, only having to purchase the cottage cheese. The recipe is very simple as all you have to do is mix and pour. I believe this is a very easy recipe for a university student to follow, and the muffins can be eaten as breakfast, lunch, or a snack, making them very versatile. You can easily take one to-go, which can be very handy if you have a busy day.

The muffins ended up tasting just as good as I remember! However, instead of greasing the muffin tin, we decided to use cupcake liners. The bottom of the muffins did get stuck to the paper, making it a bit difficult to eat. To solve this I just ate the top half of the muffin and then tried to get as much of the bottom off the paper as possible. Regardless, I really enjoyed both making this recipe and eating the muffins, so it is something I could see myself making again in the future.

Overall I would give this recipe an 8/10. It was super easy to follow, the ingredients were simple, and the end product turned out very well. The reason I did not rate it higher is because the muffins getting stuck to the cupcake liners was a bit of a bummer. Also, I do enjoy the muffins, but most of the time I would not be able to have just the muffins as a meal. I think they are a great light breakfast and a great snack, but they most likely will not fill you up. However, everyone can use an easy to-go snack, so I am very satisfied!
